The Winery, the vineyards, the cellar
The Winery
Our Winery is nestled in the heart of the hills of Piglio, an enchanting countryside that has, on one side, the base of Mount Scalambra and, on the other, it faces the Tyrrhenian Sea.
We are located in the province of Frosinone, in a place called Ciociaria. This area is historically known for its centuries old Cesanese del Piglio DOCG wine.
In 2002 a group of close friends and families, with strong tie to this beautiful area, joined together to establish Pileum Winery.
In just a few more years, this business excelled by combinig modern technology and advanced wine makig techniques with the utmost respect for the centuries old wine tradition, to produce delicious products with a grape variety which is exclusive to this geographic area.
An inspiring atmosphere that gives certainty that great wines came from the territory.
Pileum tries to find the right compromise between history, tradition, and innovation.
In fact our philosophy is simple yet rigorous: respect the land, its traditions and its history.
The vineyards
Healty grapes for great wines.
There are fifteen hectares of vineyards, located at an altitude that goes from three hundreds to five hundreds metres above the sea level.
The fifteen hectares of wineyard, they are composed by small plots located all around Piglio. This area is historically well suited for viticolture and it has a good exposition.
The production per hectare it goes from 4 and 6 tons for the Cesanese di Affile grape variety and it goes from 6 to 8 tons per hectare for the white grape variety, called Passerina del Frusinate.
Thanks to the autoctonous grape varieties we cultivate, we can produce well defined wines with varietals characters influenced by the area’s changing seasons and the local terroir.
The cellar
We strictly follow the ripening time of the grape, nd when the harvest time arrives we select the fruits and we pick them manually.
Beyond harvesting and taking extreme care of the wineyard, vinification is the most important part of Pileum’s winemaking process.
The fermentation occurs in iron steel tanks under controlled temperature, to preserve the aromatic and organoleptic properties of the fruits.
The resulting wine refines and ages inside big french wooden oak barrels, the Riserva wines they mature in barriques.
