Production area: Piglio (FR) – selection of grapes coming from young vines that grow between 350m and 410m asl
Soil composition: clay, red and grey soil.
Growing method: Spurred cordon
Harvest: manually harvested between the end of September and the beginning of October, selection of the grapes both during picking and on the sorting table in the cellar.
Yield per hectare : 60 Q.LI/HA
Vinification: destemmed, crushed and fermentation under a controlled temperature that goes between 26° and 28°C with a subsequent addition of selected yeasts for around 10-15 days.
During the first days, briefs pumping overs are practiced once a day, later on, when the fermentation period is about to end, pumping overs are longer in duration, depending on the maturation of the grape.
Later on, a natural Malolactic fermentation is supported by a low content of sulphites ( around 8g/hl)
Macro oxygenation, if needed, made by open racking during the final phase of fermentation.
Aging: 12 months in iron steel tanks
Food Pairings: A cured meats and aged cheeses board, Pasta recipes from the Roman and Ciociaria Traditions, roasted meat.
