Late harvest, the grapes are withered on mats in the cellar.
The fermentation process occurs in iron steel tanks and the passito is then refined in small wooden casks of 100 litres.
It is bottled after 12 months.
The colour is a intense gold, the nose is fresh and floral. In the mouth it's like a nectar but it has also a good acidity and expressivity.
Sweet, long final wrap.
Food Pairing: Shortcrust pastries, perfect with some apricot jam or a citrus marmelade.
